Manufacturing of biofuctional mineral water with the addition of extracts from fruits, vegetables, Greek aromatic plants, hemp, Moringa oleifera leaves, and olive leaves from Greek varieties

The global bottled water market has been growing steadily in recent years. From 2014 to 2017, due to growing concern about potential health problems from the consumption of contaminated water or tap water with increased chlorine content, heavy metals or other contaminants, the global market of bottled water has grown to over $ 200 billion with an annual growth of 9%. Additionally, general health awareness is pushing consumers to increasingly adopt new products having health benefits, such as functional water, a product with added value due to trace elements, oxygen, vitamins and antioxidants.

Use of pulsed electric field to extract valuable components from plant material

Plant extracts are the heart of modern cosmetics and pharmaceuticals, but are also widely used in food supplements, as food additives and generally in the food industry. The research for new techniques to extract important compounds from plants is one of the major goals of all industries involved (pharmaceutical, food, beverages, etc.). Until recently, the extraction of targeted ingredients (polyphenols, flavonoids, colorants, carotenoids, essential oils, etc.) from plant material required the use of high temperature and thus energy or large quantities of toxic organic solvents with a corresponding environmental burden and high cost of removal of their residues from the final product. As industrial demands are continuously increasing, new and more cost-effective methods are being introduced to optimize the extraction procedure.

The richness of the Greek flora in aromatic and medicinal plants, many of which are endemic, the existence of new plants which have now begun to be successfully cultivated in Greece (and have very important health promoting actions and economic interest) as well as the significant turn of the industry into the use of additives and compounds of natural origin have been the key levers for this research proposal.
